  **Chinese Fried Rice** recipe:  


 **Ingredients:**  

- 2 cups cooked rice (preferably day-old)  

- 2 eggs, beaten  

- 1/2 cup diced carrots  

- 1/2 cup peas  

- 1/2 cup chopped green onions  

- 2 cloves garlic, minced  

- 1/2 cup diced cooked chicken, shrimp, or tofu (optional)  

- 2 tbsp soy sauce

- 1 tbsp oyster sauce (optional)  - 1 tsp sesame oil - 1 tbsp vegetable oil Salt and pepper to taste


 **Instructions:** 

1. **Prepare the ingredients:** If using fresh rice, spread it out on a tray to cool and dry slightly.

2. Scramble the eggs: Heat 1/2 tbsp of vegetable oil in a wok or large pan over medium heat. Pour in the beaten eggs, scramble lightly, then remove and set aside. 

3. Sauté the vegetables: Add the remaining oil to the pan, then stir-fry the garlic, carrots, and peas for about 2 minutes.

4. Add rice: Turn up the heat, add in the cooked rice, and stir-fry for another 2-3 minutes, breaking up clumps. 5. Season the rice: Pour in soy sauce, oyster sauce if using, and sesame oil. Mix well to coat the rice evenly.

6. **Throw in eggs and protein:** Now add scrambled eggs, cooked chicken/shrimp/tofu, if you're using, and diced green onions. Stir-fry everything another minute. 7. **Enjoy and serve:** Taste it and adjust seasoning with salt and pepper to your liking. Serve it hot!
